Cocoa Meringue Cookies

So, there has been a lot of talk lately about cravings, more specifically, craving sweets. Thanks to the lovely Oxygen Magazine for this great low fat, low calorie cookie recipe!

Ingredients:

  • 1/2 cup raw honey, divided
  • 1/4 cup unsweetened cocoa powder
  • 1 pinch sea salt
  • 1 tsp pure vanilla extract
  • 3 large egg whites
  • 1/8 tsp cream of tartar
  1. Preheat oven to 300F. Line 2 large baking sheets with foil or parchment paper.
  2. Mix honey, cocoa and sea salt in a small bowl. Beat vanilla, egg whites, and cream of tartar in a large bowl until soft peaks form. Add cocoa mixture 1 tablespoon at a time until meringue is stiff and glossy.
  3. Drop meringue onto prepared baking sheets by rounded teaspoons, spacing 1 inch apart. For a chewy soft texture bake 25 minutes or for crisp cookies bake for 40 minutes. Cool on baking sheets before serving.
